For me a hunting knife needs to be able to skin and gut rabbits and squirrels and field dress/ gut a deer. Once I get a deer home I use actually butcher knives, Old Hickory, to cut up the meat along with a hacksaw. For skinning I either use a butcher knife or what ever "hunting" knife I used to gut the deer.
For years I used a Buck 110 and it worked just fine but the truth is a Schrade 8OT was the sweetest little field dressing knife I ever used when paired with a small hatchet to split the pelvis bone. I also think Trappers work well and have no doubt that my Case a Muskrat would work like a charm for gutting a deer. If I were hunting and camped somewhere remote I would just bring along a butcher knife and a pocket knife.
This winter I hope to try out my GEC 73 as well as my 53 Muskrat. My 2 cents.
