Hunting Knife, which one?

I would suggest the CRKT M16-14T, I carry mine everyday in all sorts of environments from the jungle to war zones. I think that it’s a sold knife and it meets your requirements – around 80 bucks, a cool ”tactical” look, a 4+ inch blade and an overall great knife

Ive skinned and parted up more goats and other critters around that size than I care to count with a humble Opinel , or a plain old Okapi .
I know they do not compete when it comes to latest brand name steels and grip materials , but they do a pretty good job just the same .
 
Skinned 2 deer last year with my Byrd Cara Cara, and honestly I was impressed greatly. Skinned, quartered, and de-strapped 2, and I washed it up real nice, and was heading for the sharpening gear, and it still shaved pretty well, so a light stropping and back in the pocket. For less than $20, you can't beat it.

The FRN handle WILL grab all manner of blood and meat gunk! The SS won't, but will be slick as the devil, the G10 is probably best, and still under $25 most places. One plus about the FRN is that for a blade that size, the knife is superlight. Throw it in a pack or pocket, and just GO.:thumbup:
 
I would go with the mini-Manix just because I think it's one of the better ones out there. If it's just going to be used for cleaning deer only though, I would go with the Gerber Gator like mentioned previously. That rubber handle is real grippy and could be a huge benefit when you have blood and gore on your hands.
