Take a serious look at the BRKT Gameskeeper (I) and the Dozier Master Hunter. For elk you primarily need an edge that won't crap out in the middle of the field dressing/skinning process. Both of these are nearly perfectly suited for that purpose. Are there people who can dress and quarter an elk with a Buck 110? Yes! But I wouldn't attempt it, and it doesn't sound as though you should either (especially in front of your boss & his boss).
