I've got one just like that only it is sprung back (or upwards if you prefer) at a spritely 30-degree angle. Dexter makes a great collection of tools for the professional.

www.dexter-russell.com sells more butcher tools than you could ever imagine. If I remember 5 -8" boning knives ,flexible, stiff ,carbon, stainless . But what are you going to bone ? I find a 5" handier for things like deer, goat, sheep pigs. Learn how to use it , its a good tool.

I saw that 8-incher too. But, in all due modesty, my 6-incher just fits my grip better!

BTW, my local Boater's World in Largo Mall still has a huge supply of these with the original packaging. Grab one - they make excellent Mother's Day gifts!

That is what happens when you allow the Chinese company that made the knife also make the packaging. They haven't a clue what a "stiff boner" means in American slang.

Actually, that only makes people giggle who don't, or haven't worked in the meat packing industry. Having done so, my favorite is a six inch curved flexible boner. The above picture is commonly called a six inch straight stiff boner. We'll have to add these to the likes of "Homo milk" and "Bastard file".

My favorite photo for Leno was of two signs on the same pole pointing down a side road. The top one said "Cemetary", and the bottom one said "Sanitary Landfill". I almost drove into a ditch laughing.
