A curved profile knife in an approachable size for everyday use, particularly for butchery. A stiff boning knife with some clearance at the heel for use at the cutting board. This is the one you don’t put back on the magnet because you know you’ll use it again in a couple hours.

The handle is multi-dyed maple burl, with deep blues and blacks and accents of lighter blues and oranges. A brass spacer ties together some of the lighter colors in the handle. The blade has been lightly etched and polished.

Materials: Cruforge-V carbon steel, Stabilized Maple Burl, Brass Spacer

Hardness: 60.5 hrc

Blade Length - 153mm

Height at Heel - 40mm

Handle Length - 120mm

Really good looking knife; top notch materials, nice texture on the flats, great distal taper, and what looks like an excellent handle.
Did you grind it more thick like a boning/honesuki/garasuki blade, or thin like a petty? Can you please add a choil shot?

I think you have something there, Mr. Ambrosini. I'd love to try one out but I'm not curious enough to buy it. Although I think it's very fairly priced.
