I am purchasing a knife from south Africa and looking for information on the process of importing/Customs/fees. I did do a search using Importing/Knifes but could not find that in the title.

You should look at the actual rules of your country's customs office. Anything you find here is just opinion.
 
I would make sure they ship using DHL, and only DHL. Spring for the extra cost if you need to, but it's def. worth it. I've bought $1000+ knives from SA and never had to pay any fees. The knives also got to me in the USA stupid quick. I literally received a knife from SA in less than 48 hrs delivered. That's quicker than Priority flat rate.

Only reasonable conclusion to me,that you are asking this,is that you are located now in South Africa yourself too and looking to make a purchase there,maybe? Anything else as Craytab pointed out-to seek in debth rules displayed on governmental custom websites,,,(opinions here,i d search knife laws subforum...

Unfortunately DHL here in South Africa seems to have changed it's policy recently concerning knives. It appears that they are refusing to ship them.
 
I am purchasing a knife from SA and currently in the US. I am looking at the doc's on the Customs site. Their pdf is 211 pages. I was just looking for a little help in determining in what I need to do as I have never done this before.

You have to do nothing. They fill out forms you just get a package. I have three from South Africa all shipped DHL I had to do nothing but sign for it when it came.
