I bit confused about steel...

VG-10 if cost is a concern and you want variety in terms of knife selection, and 154CM if you can spend whatever on a custom blade for some serious cutting.

ATS-34 is a little weak on the corrosion resistance in my mind, so I dismiss it from the group.

VG-10

Best at what? Most steels excel in specific areas rather than being superior in every aspect. Decide what is most important to you in a blade steel and go from there.

Toughness
Edge Holding
Corrosion resistance
Grindability

Those are some examples. If you want a steel that's "easy to sharpen," pick something that's easier to grind, like AUS8 or 440 series steels, as opposed to S90V or similar.

Knarfeng is right that most steels from reputable makers will work well enough. However, if edge holding is your thing, it's worth looking at steels like ZDP 189 instead of settling for under hardened AUS8. Also the type of edge you want will influence steel choice. If you want a highly polished push cutting edge, I've gotten better results from 13C26 and VG-10 than I have from S30V and D2.

I agree that VG10 is one of the best all around steels on the market.

Any. Take a closer look at who makes the knife and his reputation.

Consider design, how you like it and how it feels to hold the knife in your hand and blade shape and edge too.

Well he asked from these three considered in a folding knife, so "best at.." is not the main question. But you already gave your answer.
