This is the series of events I see unfolding in the not-so-distant future.
Step 1: Sell motorcycle.
Step 2: Two weeks notice at job.
Step 3: Take part of the money from motorcycle and get on wife's medical insurance through her job.
Step 4: Use remaining money from motorcycle to purchase materials and float myself on bills for the next few months.
Step 5: Jump into knifemaking both feet full time and see what happens.
The absolute worse case scenerio: Full time knifemaking doesn't work out and I'm forced to get another job, in which case I'll be in the exact same boat I am in now. So even if it goes bad, I'll still be no worse off than I am now. The only difference being that I'll be out a motorcycle.
