I need help finding a good multipurpose knife for my husband. Any suggestions?

I wouldn't get him a Salt Series knife. He wants it for all tasks, not just boating.
He can wipe his knife down when he's done using it on the boat, problem solved.

That being said, you want something with a nice lock and makes a good all around EDC.
With that in mind my suggestions are:
Spyderco Manix 2 - Great steel, beefy knife, can handle all sorts of tasks.
Spyderco Sage 1 or 3 - He'd probably like the 3(Blue) best.
Spyderco Native 5 also makes an awesome EDC.
 
Every time anyone asks for recommendations for a knife under $100, ten people say Para 2. Why? These knives are almost impossible to find and list for well over $100. Why send her on a wild goose chase. I would recommend a Benchmade Mini Griptilian. It is a little less than $100 and is readily available at all major outdoors stores and online. Other possibilities for easy to find knives would be a Kershaw Leek, a Spyerdo Delica or a Case Mini Trapper (Old School).
 
Check out KershawGuy's webpage HERE. He sells Kershaw (a.k.a. Zero Tolerance) factory blemishes, which are heavily discounted because they may have a small paint chip on them somewhere. The ZT 0200, the ZT 0350TS, and the ZT 0350SW are all really good choices and are under $100.

The Para 2 would be great...if you could find one. They are hard to come by right now especially if you don't know the right places to check, some people are checking daily on different sites and can't find them.

The Spyderco Pacific Salt would be a great knife for him. It won't rust on the boating trips, it has a good size blade so there's a lot of edge to use before it goes dull, deploys easily even with wet hands, yellow scales makes it easy to find if dropped. I love mine, I use it for back up food prep here and there even.
