I NEED NEW IDEAS: Lets talk Food

I'm heading to the Mtns. again this week and realized I really need some new camp food ideas. My two must are a good Brunswick stew which I usually have the first night out ( have no idea how that became a tradition but it did) and Canadian Bacon..

So, what are some of your fav camp foods? Must be easy to keep of course! Post away.
 
Homemade Granola. It's nice for when you don't want to stop traveling to set up and eat.
 
Brown rice with curry powder and chocolate chips. Honest, great as a late night, warm the belly and help the circulation meal. With some cider, sleep like a baby.

Baked chicken breasts with rice. If you take the cleaned, prepared chicken breasts frozen and well insulated, it will take them quite some time to completely thaw. I braise/saute them until mostly done and place them in a bed of my favorite cooked rice, either saffron, jasmine, or brown with wild rice. I then pour a can of undiluted Campbell's cream of mushroom soup over the dish and bake. A variation is to use a can of Cajun gumbo soup over it. Baking on a campfire isn't hard as it sounds. If you are really hungry or want to stretch it for more people, you can place a few canned biscuits on top when you bake it as well.
 
Uncle Bens already cooked rice in a pouch. all you have to do is heat it up in boiling water. they have many flavors, including red beans & rice! always Ramen soup, light & tasty!
 
Ship's biscuit.:P If you can stomach that for any period of time, more power to you. There's always the classic beef jerky, maybe canned fruit. If you still want bread, get some artisan bread if you can. I've had that stuff sit on the counter for a week, and still be almost as fresh as the day I bought it. Far East Toasted Almond Rice Pilaf. Good stuff, and only takes a little while to make.
 
Polenta, add some dry beef that was sitting in water for about an hour before cooking. Carry some butter and add it right before its done with spices.. min rice after you cook it add some raisens and suger maybe some other dry fruits... makes a great breakfast before hard all day walk.. You can use honey instead of suger which is even better..

camping I cook anything I'd make at home.

Backpacking I like the chicken breasts and salmon in the foil packets and then serve with couscous or pasta. If you get the fresh made type pasta that just needs boiled a few min it is great.

Also deer meat cooked at hom and sweet potatoes and onions steamed at home and then dried and rehydrated is good.:thumbup:
 
omletts in a bag. mix the eggs, ham and veggies in a ziplock, and throw em in a pot of boiling water. make sure the baggies are sealed good, or the water wont be usefull for making coffee when your done. Easy breakfast...........
 
Some traditional camp breakfast here in Cali, would include some chorizo... great with eggs and whatever else you can throw on a pan.

But come to think of it, it's better suited for car camping, to include a cooler. Which would also be trad camping here in Cali:D
 
Mountain House freeze dried foods. Rice & Chicken is especially good. It doesn't get any easier for a great hot meal. All you got to do is boil 12 oz. of water.
