Well even after all those years with Cobalt I have her worked into being straight again, she likes it. :thumbup: :cool:

I just got the 10” steel from a restaurant supply shop that is primarily an online store but happens to be a few miles from me, it is named Dvorson’s. It was only about $24.00. It really makes those dents and rolls (from whacking a nail and the concrete) disappear.:thumbup: I was using ceramics before and they don’t work as well.

So you like the traditional grooved steel? Good to know, as they are probably more readily available than the smooth ones that some guys say are better.
 
In my trade I find that grooved steels are better for a greater time.

Smooth steels work great when you have a damn sharp knife to start with.

It could be different but my knives I work with are about 55Rc

Well that scared the crap out of me.

So I have been in the kitchen for the past 10 min steeling an old kitchen knife on edge of the spin to see how much metal if any would come off. It did remove some material but no more that my ceramics did. So your point is well taken it did take some metal off but you have to steel a knife for a long time before it took of any more material than an average sharpening.

But all things considered I'm not looking to take any material off so I’ll look into one that doesn’t cut at all. I use to have one and it went away when someone move out of the house some years ago.:rolleyes:

I don't think I've seen a recurve next to a standard FBM before, they appear to be a bit more wieldy.:cool:

I've used the dick combi hygienic and its a fantastic steel. its a square shape, two sides polished and two sides fine.

really fine too not like kitchen jobs. well worth the money if you get one (in a trade or kitchen that is not sure about Busse value)
 
I can't believe I am typing this but it looks like DICK polish is going for around $89-$109 on line. :D They are pricey, but a good round smooth steel is essential. I thought I brought the old one home after I closed the restaurant, but I can't find it. I'll have to go by there and see if it in a drawer somewhere. It will save me $100+ if I can find it.

I can just see the 14 year-old kids that are on here running to mom asking if they can get $100 so they can get a DICK polish tomorrow.

I sent you a couple, I found the Dickoron (more common name in US) for $80 and there were some cheaper smooth steels out there. The main difference is the Dickoron model is hard chromed so it is going to be darned smooth and resist corrosion and rust. Just do your steeling with a clean dry blade and that will be of little consequence. My old steel has one heck of a patina on it and it probably isn't as smooth as it once was. Maybe I can take it to the electro plater in town and have it dipped, if I want to ruin the nostalgia I have associated with it.
