I'd hate to be the one doing the dishes, but....

No doubt about them being Fisher knives. He has been making blades so long that I believe he must be bored with making anything other than art pieces. I def. agree with viva la, hollow grinds suck when it comes to kitchen knives, but if you've ever visited Jay's website, he makes it pretty clear that the hollow grind is the only way to go. I have to say that Fisher makes some of the nicest pieces and designs in the world. His locking shealth is a work of genius.

Would also be a PITA to clean

cleaning that wouldn't be hard if you use one of these:

p.s. jay fisher's knives are just amazing works of art!

.

Looks to me like cutlery for someone who never cooks. They look well made and nice and all. Not my cup of tea but then I do not have the budget for much beyond using knives.

Maybe they are "amazing works of art" but I cant imagine using them for a long time. The handles (though obviously well made) remind me of those hood ornaments with large plastic colored wings some folks in the hood were putting on their Cadillacs in the 70s. I like a pretty kitchen knife but those just have too much going on to not be distractinig in the kitchen. However I thought oversized tennis rackets looked funny and now there is little else.

For me a thinner bade is better, I have an old Cattaraugus that is so thin the food just falls off the blade. The thinness makes for an ease of sharpening that is incredible.
While the OP pictures look pretty, they also look un-functional as the thicker top edge of each hole will just grate or catch each edge it comes to.
The handle over the blade looks like you can only use the last 2 inches near the handle just for chopping and not slicing. I like to work close to the handle, it keeps my hands close and uses less motion to slice and chop.

+1 exept i can't stand hollow grind in a kitchen knife.

and i cook for a living. grantons, hollows, scalloped blades and the like are just plain useless. it was designed to sell more crap imho.

those just look completely unpractical to me ...

What knives do you prefer?
Thanks,
Jerry
