I know there have been a lot of threads on this idea, mostly asking what everybody would have if they could only have one knife. I have given this some thought. I have gone back and forth on several knives but I finally figured it out. If I could only have one knife it would be an Esee Izula. Now, let me explain my thinking.
1] I live in the city. I need a knife I can keep in my pocket. It needs to be out of sight until needed. The Izula fits perfectly in my pocket (without the clip plate) and the sheath flies off with the push of a thumb if I need it in a hurry. Also, it needs to be light enough to carry and not drag my pants or shorts down. Instant access, light weight, pocketable, that is an Izula.
2] I do make occasional forays into the wilderness. So, I need a knife that is survival capable and good for a range of tasks, such as skinning animals and fire material making. If I were to crash in a jungle the Izula would be a great choice. The knife is nigh unbreakable, is not perfect for all tasks but does most things well. I can make a spear, or use it as a knife, or baton with it if I need a hatchet.
3] The Izula is easy enough to sharpen without fancy diamond stones. A car window or a coffee cup will do. Also, I can have 1095 or stainless, my choice.
4] It comes in colors, so I can have a people friendly tool, if I am so inclined.
