If you could bring one knife back from the past....

Western carbon steel w49 bowie.
Gerber mark II, BMF, bowie.
Benchmark Ninja , had a spearpoint 4 inch blade with 4 inch synthetic handle.
EK M4 and M5 at 1990s prices
The old Original Cold Steel Recon tanto (NOT the 7 inch bladed kraton guarded one). basically it was a regular Cold Steel Tanto with brass guard and pommel, Guard pommel and blade were sandblasted for a non reflective finish.
Also put the Buck 120 and 124 back into production.

All the great daggers like the Gerber Mark 2 and my favorite the mark1 Sykes Fairbain with the knurled handle. A good modern copy of the Mark1 SF dagger
made of decent tool steel with a good kydex sheath would rock.
I would bring back the Case V42 dagger the Devils Brigade used even though
it is not as good as the SF. Strider has done both the SF and the Case but the SF had the ringed handle that turns in your hand. Nice of CRKT to bring back the Sting. I am hoping they do a bigger one.

Anything by EK
They are currently being made by a company in Virginia. http://www.ekknife.com/

used to have a buck 110, but with a plastic/frn handle. I think it was called the "worklite" or something like that.
The original Bucklite, like the 426? A great knife, one of the first lightweight liner-less locking knives. If released today it'd be a "tactical" knife.

The pre-war Bruckman pocket knives.
A great choice. They are common on eBay though, so you don't have to go without.

My own choices would be the Soque River lockback, the Becker BK9, the Aristocrat Majestic, or the Boye Basic. There's also a discontinued Buck fixed blade with the phenolic handles - can't think of the number offhand.

I can't make up my mind between the Gerber Mark II and the Buck 560 XLT-Ti with the titanium handles.

Two knives they should never have stopped making.

edited to add:
And perhaps the Blackjack H.A.L.O. aswell.

Benchmade AFCK 806D2. They really goofed up discontinuing that blade. Before they stopped making it, few talked about it- now, everyone wants one! I got mine 3 years ago and still think it's the best Production Folder in its class.

Are you guys saying the SERE 2000 is out of production?

I had a Gerber Michael S Walker design. It was a folder. Best knife I ever had and I lost that SOB when I got in a car wreck back in '04... Some bum probably picked it off the pavement.

all the gerber "survival/fighting" knives[mk1&2,command 1&2,guardian,guardian 1&2] as they were called back in the day,in all variations.also all the "old" al mars[can't bring Al Mar back].sorry, more than 1 knife.

Timberline discovery after I were out my first 1 I search far and wide to find another one i found one with the G10 scales. but I just couldn't find it with the aluminum scales it just made it feel a little heftier and a little nicer

Gerber Firestorm fastest opening (effortless flick) non assisted folder

CRKT Triumph best tactical blade design I have ever seen in a folder of its size. The curved down blade with the corner sticking out makes it good for drawing through soft material and the tip is good for stabbing. Even if its a folder it feels very solid. The handles aggressive texture bites securely into your skin and the assisted opening is scaringly fast and makes a sound I've never heard on any other assisted folder.
