Probably would have to be this monster bowie from Tim Potier. This was sitting on Tim's table at last year's Blade show, and was the most awesome bowie I had ever seen. Big; I mean at least 12" blade of forged W2 with some kind of killer burl handle. There is no spot on the blade; that must be on my lens.
 
If not the Onion "Habu" the Walker would do it for me !

I was looking for this picture when I saw the thread title, but I could not find it. THIS is the knife that I want most, the Quillion dagger that Bailey Bradshaw submitted for MS qualification at the 2001 Blade show:

Hm.... Amazing piece. Doesn't float my boat though. I think the original one was made by Hugh Bartrugh, IIRC?

You picked my wife's knife favorite knife. She got it from Ken at the 2003 Las Vegas show. Every once in a while she lets me touch it. ;)

Stop by our table at the BAKCA show and test the speed safe!
 
I can't find the photo right now :( but I would go for that Ron Newton Bowie / blackpowder combo. Not only beautiful, but a work of technical genius. I searched for it and came up dry. It was the S hilt Bowie, where top of the S was the hammer mechanism. Incredible piece of work.
 
Anything...really anything?? I'm a folder kind of guy and while I can certainly appreciate those beautiful large forged blades in the beginning of this thread, I still think I'd go with a folder.

Since we are talking dream knife here, I'd go with something that's virtually impossible to obtain unless you want to spend several times the original list price from the manufacturer. Any guesses...

A custom Ken Onion folder. Maybe one of these San Mai Cowry Bumps:

because the design is simply the sexiest around, excepting maybe for the italian "bow tie" automatic in a bayonet grind.
