OK, so you're not asking anything like I have to make due with just what two knives I keep, livin' off the land, killin' zombies, etc., like every other goofy quesiton that is asked . . . What it then boils down to is, I'd have to start over after I got rid of everything but these, so what knives would I keep so I wouldn't have to find them again:

Say you have to get rid of or sell almost your entire collection ...for whatever reason. As heart wrenching as it is to think about, what one folder and one fixed blade would you hold on to? If you can narrow it down to just ONE knife, more power to ya!

I'm easily pleased, give me a pile of scrap and i'll make it into something tasteful...guess growing up with nothing makes you look outside the box, which leaves you with money for beer.
