If you could only own one OF EACH Carothers and Busse?

OP, I just noticed two things. First, that you edited your post, asking which model if you could own one of each, rather than only one of either. Okay, fair. I also noticed your username. So my suggestion is you select an infi model from Busse, and a MagnaCut model from Carothers, in order to best withstand the environment these knives are destined to be used in:
