Ken,
With computerized tooling, production and inventory control, there should be no problem with customizations with a limited number of patterns to deal with. Most of the changes would be to handle materials and blade types that would be have been roughed out previously. The number of people would be minimized by the automated production.
Turnaround would be almost immediate. The order would be entered into the system and the materials would be worked into normal production schedules automatically, which would minimize waste.
Would we still need custom knife makers? Sure! There will always be a market for the handmade custom product. I doubt that the customer using this system to "create" a knife would find the product a replacement for a true handmade custom. And no matter how sophisticated the automated processes are for the mass producers, somebody has to come up with workable and marketable designs.
I would envision my company as a Buck Knives meets William Henry and type. The basic product type, though more limited, of Buck with materials like William Henry. Then combine that with the production concepts used by Honda and Toyota. Oh yeah, and the money to get all this cool stuff set up.
