If you were MacGyver, what SAK would you bring?

the one the script called for.
Since I'm not him (or is it a her this time around?) I'll stick with my Huntsman and Signature, or Recriit and Signature.

I would just use a Swiss Champ and be done with it.

For several years, that was my choice. My only SAK then, I belt carried it everywhere it was legal to do so. The neighborhood kids used to call me "Knifeguy," and I repeatedly had to show new kids on the block all the implements. During that time, I used every gidgy on it (yes, even the hook :p ) except for the small backside mounted screwdriver.

But over time, my daily needs changed. For example, as a photographer, I used magnifier a lot, studying negatives at the photo lab where their loupe was either missing or in another customer's hands. But when I switched to digital, that was no longer necessary. Also, I got introduced to the Leatherman Charge, and things changed again. OH operation of the blade was a huge asset. I could hold up seamless background paper with one hand while drawing out the blade, making the cut, closing it and returning the tool to pocket without having to switch anything. Previously, with the SAK, this had been a juggling act. But I still needed the other implements, including some not on the Charge, so I started to carry a Micra as a supplement, no problem since it disappeared into my fifth pocket. So then, two tools replaced the one biggie.

That set me up for phase three: when not working, I could carry a small SAK in one pocket, another supplementary one in the other, and the whole package was less weight, more convenient and completely pocketable. Now, the Swisschamp gets carried only when I'm traveling, and I have a whole set of SAKs and Leatherman good for different purposes and carry options. My happiness is complete. Oh, wait...
