I'm really struggling with plungelines

I've never used files for cuts like that but I bet a clamp like the bubble jig one would work great for somone with the steady hand and patients to do it.
 
That video is pretty close to my method too. The main differences are that I scribe my lines rather than use sharpies (because scribed lines are thinner and they don't vanish as a result of touching the blade repeatedly). I also use flat files instead of the round ones. Otherwise, same process... angle in hard on the first few strokes, and with successive strokes reduce the angle until you hit the place you want the bevel to stop.

Do you just drill a hole before cutting out the blade profile?
