Here's another vote for something other than yer basic black for knife handles. I understand that it's low profile, I understand that it's least likely to offend, I understand that "black goes with everything", but it's gotten rather monotonous...
Hmm, maybe we can convince the tactical crowd that something other than sinister black knives would actually be to their benefit, offering the camouflage of incongruity -- nobody'd recognize it as a knife if it was wrapped in a pink or sky blue or (some other bright sissy color
) handle. 'Cmon guys you're secure enough in your manhood to not be afraid to carry something that's pink, right?

For production pieces, the manufacturers needn't worry about making and distributing the whole rainbow -- just keep making the standard black model, and make a small quantity of one other color at a time; this quarter (year?), it's dark blue, next, it's dark purple; let the thing be a little scarce, and if you get a lot of reorders from dealers, that's your clue to make more.
In the meantime, you'll make some knifeknuts happy, you'll probably re-sell the same design to some knifeknuts again (just to get the other color), and you'll garner at least a few more ELUs that you wouldn't otherwise have gotten, when the right non-knife people happen to see one in a mall cutlery store window.
