In need of a hard use knife.

Sounds like a job for the Spyderco Tuff. The whole design intent was for a folding knife that could serve in as many fixed blade roles as possible.

It sounds like we have the same needs in a knife almost to the "t" except i'm not in forestry (although my asv rc100 does have the forestry package on it). I'm in construction for state highways. The 560 gets more pocket time flow thru design make it easier to clean, although my 300 has never failed to deploy (probably never will) it still in the back of mind that i may gunk it up. The iksb on the 560 just gets better with age, the steel is stronger, i tried hiking with my 300 and it kept banging my leg when i was going up trails I ended up putting in my backpack and staying with by translucent blue manix. the 300 blade shape does look like an awsome skinner. Its steel a great knife don't get me wrong i LOve mine to death, I just find myself going to the 560 more often then not and its clip is better in my opinion. hope this helps. Its worth the extra money. The 300 does get more fondle time if this helps to confuse you.
 
This is just purely my opinion but If I was planning on thumping on a folder day in, day out it would be neither of those. I would suggest The coldsteel spartan or voyager series because they are some of the strongest folders out there and even in there largest sizes they are around 55-65$
 
You cant go wrong with either knife. Its to hard of a decision, there is only one answer, get both!
Your concerns of the 560 being thin are hogwash, It is soo comfortable in hand.
FACT: the 300 is built tougher.
