OOPS! Still finding my way around here, I will check out the other threads. Noob at sharpening and arthritis has taken hold so I need a sharpener with that in mind. Thanks for all of the responses so far.
Maybe a powered system would be best then. They work MUCH faster, so less time for your hands to fatigue. Of course this means mistakes happen MUCH faster too. It's a double edged sword.
I got into sharpening recently with a strop, using BKR black and green compound after getting BKR knives with convex grind. The trick for me was not to use too much pressure. From tutorials I learned to keep your knives sharp all the time. Now after every use I touch up with a few strokes on the strop with green compound. Previously I used the spyderco system and might use it again to repair damage that might occur in the future.
I have been poor at freehand sharpening. I picked up a KME sharpener this week. First up a Lowes special that was a 3 knife combo for $10. Very decent result. Next up a couple of kitchen knives. I stuck to the tutorials and went for the burr and worked it down from there. Finally after many years silly sharp blades. A few more kitchen knives and then some of my good old folders. I strongly recommend the KME. Patience and knowledge are the key. I'm talking dead dull knives to silly sharp with really nice cutting edge geometry.
