Inexpensive knives that outperform expensive ones

I have read and heard about the Okapi, but have not tried one yet. Been meaning to, just never got around to it. In all seriousness, if you can't do the task at hand with an Opinel or a Mora, a knife isn't the right tool to be using. That said, I still enjoy all my other knives, but those two cover what I really actually need.
 
I have used three Spyderco Byrds: Cara Cara, Meadowlark, and BY01 (clipped to my pocket right now). All are inexpensive, very sharp, comfortable to use, and sturdy. Fit and finish isn't perfect, but for the price and performance, who cares?

That may include Kitchen knifes?

Windmühlen! Pretty simple cheap knifes, that outcut many other WMF or whatever brands are out there.
