INFI in the kitchen

I have to admit I have used my 5/16th inch bowie (not a Busse) in the kitchen many many times. It will definitely chop bones (I still get a chuckle every time I go over to the in laws and look at their absolutely mangled Cutco knife he thought would be able to chop a heavy bone in half.........huge warp/dent ding a big as my wife's pinkie is around and it barley marked the bone), good for rock-chopping and dicing herbs and such. The guard does mean you have to use it at with the guard off the edge when chopping.

I think that Ban's latest HR mod would make a great kitchen knife! Thinner and sharp!

We also have a Busse in the kitchen. I do not know what model Busse it is. I have been calling it Kitchen Busse for 5 years. Ghostwolf handed it to me one day when I was trying to cut up deer meat with an average kitchen knife. I liked using it so much I stuck it in the kitchen drawer after it had a bath. The whole blade has patina now. I like it.

He talked about trading it once because it is such an old model, but I talked him out of it by suggesting it could easily cut other things. I have never considered it "mine" tho, because everyone uses it, including the daughter.
 
One blow of the SHBM smote an apple into sections!

Meat gives it patina you say? Hmmm. I think I need to go cut some roast. :) Seriously, I wouldn't sweat a little patina. Give it more character. I think of how much character all those old butcher knives my grand dad had and the stories they might be able to tell.
