I'm with you on the Ergo handles being too tall/wide. The answer is the EU handle, such as on the EU17, or EU Mofo/Mojo.

3b2, is an awesome all arounder thats just a little bigger that your Boss Jack.

Guy, is correct that the EU handle is out of this world.

sarge7, is my favorite of the Sar series with the only flat grind of them all and with the lightened handle its same or less weight than the SAR 6. Maybe the best all around camp knife if you only had one.

Id also add the Axe Hammer. This is a great design and IMO an absolute must have in every Busse collection. It is the epitome of a Busse Combat field knife
 
Have you looked at dpx assault 6? Been looking at it myself but have not pulled the trigger to get. Specs are contained in the link below and contains the criteria you mentioned.

I have the dpx 2.0 folder. Not what your looking for but a tank of a knife.

Never had a knife with Sleipner steel but heard it is like D2. Also according to the specs its heat treated to 60 HRC so it might be harder to sharpen in the field if you don't have a diamond sharpener.

Stick with Busse Family, they will not do you wrong.

There is nothing wrong with a Fehrman Last chance. I own one and love it, along with the first strike in fact, other than the Busse Family, Fehrman is my next choice along with Treeman. In Busse lines, I really like the BATAC for the size your looking or a Hellrazor might be a good choice. one of my favorites lately has been the new Ratweiler in .18 thick. super fast in the hand and light weight along with a lot of blade. Your only problem is finding something in busse that is available and not selling for an arm and a leg.. Resin Guy; I've never even seen an EU17! nice design though; would like to find one at a ganzaa one day :)

Batac? Might still be a little thick blade wise. The handle is still some what thin though.
 
ETA- I like the design of the steel heart ergo so much, I'm considering sending it to Busse to have the handle thinned out/ steel removed to better fit my hand. What are yourthoughts?

Like Guy says, the EU handle is the best shape associated with the Ergo line. This photo shows EU, TAC, and Ergo handles:



This shows the TAC and SF handles. I think an SF handled knife, like the Force One shown or the SFNO, may be a good choice based on your described preferences.

Nice Tankbuster lol, it was just a bit too heavy/thick for my tastes though. I'm definitely on the lookout for a SAR 6 or Sarge 7 to try though.

The DSF probably wont work for the OP. Notice that he prefers a tall/wide blade.
