Great list!
On my out list;

95% of all production knives

In list;
Natural handle materials #1 STAG

Flat or convex grinds

I think your in or out list depends on wether your are talking about folders or fixed blades, as forumites seem to often settle out into these two catagories of Primary interest.

Folder INs
New hi tech SS of any kind
Talonite, Stellite, etc.
NEO-Tactical one hand opening gadgets
NEO Tactical novel locking systems
1.e. EDI "rocker Lock" etc.
novel and more complex carry systems
ie, magnets, kydex, neck wear, wrist
sheaths, etc.
NEO Tactical knives incorporating other
gadgets, like lights, GPS devices,
pager like communications modules,
wire tap detectors, etc.
Different bare metal finishes, tumbled,
acid washed, peened, etc.

FIXED BLADES on the other hand will be seeing a move to very traditional...
Carbon steels, but must be edge quenched
or differentially tempered.
Sole Authorship, hand made.
Stag, ivory, bone grips.
More complex hilt handle construction,
ie, stick tangs, multiple ferrules,
spacers, edge wrapping, inlay, etc.
Dress up quality sheathes to go with
above.
Satin finished, "hand rubbed " "aged"
finishes on blades.
A desire to see prominent but tastefully
and artistically designed makers touch
marks(stamped) instead of electro-
chemically etched marks using photo mechanically produced stencils.
