As for messing up with the heat treat (Cobalt's comment), I proceeded very slowly, stopped when the blade was hot when touching it (hot, but I was able to keep it in the hand so not REALLY hot). Let the blade cool down in water, and keep grinding with very little pressure. It took time, for sure, but I hope the heat treat hasn't been altered...What do you guys think? How do you guys proceed?

If the portion of the the knife being grounded is cool enough to hold with your bare hands then it should be ok. I always keep at least one digit on the surface of the opposite side being ground to feel when it gets too warm.
