Interesting little idea

I'm not familiar with the worksharp but if I was using power tools to make the edge beefier (and closer to convex) I would do a little at a time to minimize metal removal. I would do some and see if it chips with the new profile.

I would start by taking the shoulders near the base off, radiusing them. Then I would grind the tip back to a beefier place and blend that in. If you look below, there would not be a ton of hollow grind left. If that chipped, I would do it again.

In practice, what's actually happening is closer to what you're describing. The original grind was fairly shallow, so the shoulders and the edge have rounded down. The original grind was pretty hilly, too (it wasn't smooth at all), and it's started to smooth out on one side. The other sides just needs a bit more persuasion. I'll post before and after photos when I'm done.
