Investment knife?

Buy yourself a really nice Chris Reeve pocket knife and a Busse chopper. Those two high end knives will run you approximately $1000 for both. Use it for life and save the rest in U.S. bonds or CD accounts. I'd stay away from the stock market.

An Emerson custom bought from one of his lotteries is basically guaranteed to resell for significantly higher than purchase price if bought that way. The secondary market is ridiculous with how much they fetch, but the only way to get a real deal is direct from the maker, which requires some luck. There are other makers like this that you could look into.

Problem is no one knows if something will suddenly not be popular, just because Emerson's have been very popular for a while doesn't mean tomorrow for whatever reason they won't be worth squat. Knives are really not great investments.

I've found that several of my knives have gone up in value simply because of the price of steel.

For example my kershaw outcast was purchased new for $49 years ago and now is selling for almost twice the price. My fallkniven thor was purchased for about $250 new at an online auction and is selling now for enormous prices. Finally, all my fehrman knives that I purchased directly from the company are now selling for substantially more than what I paid.

I may be wrong but since steel is a commodity and subject to economic conditions like gold and silver it may turn out to be a wise investment if you know what to look for in a knife with quality steel.
