One of the coolest apps I've found is VLC. It's a media player where you can drag and drop just about any movie file (.wmv, .avi, etc.) to your iphone and it will play it without needing to convert it. Oh and it's been mentioned but the NPR app is great as well.
 
I only have a few on my phone at the moment that were not on there to begin with.

If you are in to games, Angry Birds is addictive. There are a few different versions. Try the Angry Birds Lite to make sure you like it.

here's my contribution - i guess i skip the obvious like camera+ or the CNN app for the special stuff:

DataInherit Password Safe: let's you keep all your passwords (encrypted on the phone as well as on a server - in switzerland actually) and even inherit them through the platform (there's also a free version with a limited amount of passwords which is enough for me...)
MotionX GPS: THE app for the outdoors - just one buck right now
PocketCPR: realtime feedback and instructions on cardiopulmonary resuscitation - just for the case of an emergency when no pro is around
SaiSuke Calendar: this app really changed the way i make appointments on my job - i'm so much better organized now! and it totally rocks that crappy calender app that comes with the iphone (or any pencil and paper method) to shreds...
ProHDR: really nice option if no other camera is around and the light isn't that good - i was really stoked when i took the first picture with it!
Living Earth HD: i really like that one although its not very productive: the space station kinda feeling of it, the sight of our blue planet from afar and seeing a (nearly) live picture of the clouds surrounding it... that just has something to it!

@ ndeezl: yeah vlc is a nice app to have - but you can't get i anymore since they pulled it from the app store (because of some legal issues)

A few that are standouts for me, some of which have already been mentioned:

RadarScope - an absolutely fantastic Doppler wx radar app that covers the entire country. It updates as quickly as the radar site you've selected makes new data available, which, at least for here in SoCal, means every minute whenever there's precipitation in the area.

TideGraph - a fairly simple and straightforward presentation of tide data which is a must have for fisherman, sailors, surfers or anyone who lives near the ocean.

SkySafari - a fantastic stargazing app that is packed with information. Dead simple to use and automatically adjusts to your current location. Lots of fun for camping trips. It's not inexpensive, but does occasionally go on sale for a super price (sometimes to coincide with notable anniversaries in our history of space exploration).

Honorable mention goes to Wobble. Not exactly what you'd call highbrow, but definitely good for a cheap laugh.

Some fun games: Implode!, Angry Birds, Fragger, The Deep (pinball), DeerHunter (and DH: Safari), and Let's golf!

Lot's of good ones already listed. One I didn't see though is Google night sky. Pretty cool, just aim you phone anywhere, anytime and see locations of stars, constellations, planets, the sun, horizon, etc.

My biggest complaint with the stock iPhone calendar app is that it automatically deletes old appointments that you've already attended. Does this app overcome that deficiency?

Thanks for the clarification. I searched the App Store and couldn't find it. Now I know why. :D

SkyGrid - Collects and provides links to a variety of things on the net
Evernote - Good utility for notes - PC version too to sync w/
LED Strobe - Simple yet effective light
Live Cams - Live camera feeds in public places around the globe :thumbup:
LabTimer - Time multiple things (4 on phone more on pad) at once. Stopwatch and timer :thumbup:

i still scratch my head in disbelief about the stock calendar app...
SaiSuke deletes nothing until you say so. it's really a pro tool but still absolutely intuitive. really worth a try - the free version has ads but is (nearly) fully featured.

Thanks, I'll check it out. If it incorporates the automatic reminder alarm function and will sync with my iTunes on my Mac, then I'm in.
