I completely agree with this. I have a lot of INFI. I like to call it the rubber steel. Great stuff but for a small slicer it's about the furthest from what I would look for.
Even Jerry Busse would agree it's not the choice for a small slicer.
This is not the forum to argue the merits of 1095 vs. modern powder metallurgy alloys.
Nor was the question, "what alloy should I buy?"
If you do not have a recommendation for where the OP can find what he seeks, you need to stay out of this thread.
I carve up my hams, roasts, steaks, chop my veggies, slice my cheeses with a TGLB just for fun. It works great and still has not needed sharpening (the still original edge has been used to chop through bone, wood, and my girl's cutting board too), how could a thinner piece be less ideal? Just saying I would like to see some (Th)Infi.
I am fully aware of 1095 ease of sharpening, and acute edge abilities, but it's boring and everywhere. Just looking for the next "cutting edge" in steel development and use.
Honestly I love the looks of the KaBar Dog's Head stockman in Ram's Horn and 440C, and the KaBar Dog's Head Coppersmith large lockback in D2, was just looking for something even better. IMHO the 1095 is less of a performer than the 440C and D2. Have any of you Gents tried the KaBar slippies?
Still lots of great things I have never seen, I will get a 1095 slippie someday, but for now I gots to satisfy my urges.
