Is it possible to water quench a stainless steel?

I grabbed a bit of 420M at a knifeshow yesterday, and I vaguely remember hearing that it can be water quenched. Does anyone know anything have any experience with that or have a resource that might be helpful?

The Heat Treater's Guide says to quench 420 in oil or air. "Oil quenching is preferred, because it guarantees maximum corrosion resistance and ductility."
