having a 10'' or 12'' contact wheel that is just aluminum...no rubber.

would that cause problems when grinding?

There are a few reasons why a contact wheel is rubber coated. One of them is the reason L6Steel gave. A rubber coated wheel is also more forgiving. If they are not coated with rubber then it would be like grinding with a stone. Wrapping a plain metal wheel with a few layers of duct tape or electrical tape would be a quantum step up.
