At least it paid off this time!

Took my son to school this morning and noticed a dead axis buck in front of the neighbors house by the road.

I just knew it was the work of my wife since there are only a couple of houses on the single lane road and we are the last one. Not much traffic at all so to speak.

Anyway, we are out in the country and have a massive herd of Axis deer living amongst us. No lie, I have seen groups of at least 50 to 75 of them all grazing at once.

That's not counting all the white tale. It's like a dang petting Zoo around here. I almost hit a Turkey this morning too.

Well this guy jumped out in front of her when she was leaving for work about an hour before I left. So the deer is still flexible and I got to it before the buzzards did.

Last thing I expected to be doing on this rainy morning is cleaning a deer. Lucky me! :D

Slice the back straps into steaks, wrap individually in bacon, put in the broiler at 500, watch closely and cook to preference. You can thank me later :thumbup:

Been there done that, sometimes it's too bruised up etc but that look like it just fell over lol.

Dang, I haven't even seen a white tail to shoot during the last few seasons, and your wife goes and kills an Axis and all but puts it on the butchering table?

Well, all done..........for now at least.

Off to the store for some ice. I was very lucky today. It is 55 degrees out and was even colder earlier, so there was no worry of the meat spoiling. I was able to take my time and enjoy using my BK-16 and honing in my knife skills. Yesterday it was in the Mid 80's and I would have had to rush to get this bad boy processed.

Bad news though, I did put a little roll in my Knife edge. ugh, I will explain more later.

This is what I kept. Pretty much all the meat was in great shape and the guts were not busted. I was worried that they were when I found him, but it was just a little throw up or something.

Grilled back straps sounds amazing!! I haven't harvested a deer in a few years, so just thinking about it is making my mouth water.
 
Nice score!

Angie is an excellent driver and refuses to hit a squirrel, much less a turkey. Even more disturbing, the "deer" around here are much less numerous, and way, way smaller than in central WI where I grew up. They look like sad little grey dogs compared to what I'm used to... :(

Since the 16 has a great drop point design, you can easily run it up the legs or other parts of the animal to cut the skin without having to worry about splitting or cutting into the meat.

Haha........ I actually have a similar recipe that involves jalapeños and the grill. Even people who don't eat deer come back for more! Im sure yours is just as good!

Yea, not much was ruined at all. She was one house down the road and couldn't have been going over 15-25MPH. Must have hit him just right.

She said that it actually got up and she thought it walked away. Must have hit it just right. And this is not the first one she has nailed on our street. The others have all been fine and are still running around fine.

Haha. I know how that goes man. I will have 15 to 20 white tale eating at my feeder in my yard all year, and as soon as deer season starts, they are all gone. Well the Bucks at least. The little scrawny ones still come by, but are just a little more skittish.

The hen scares the $hit out of me, man. But, when should I show up for dinner?

That sure does sound good! I love deer. This is the 5 or 6 one I have harvested this year. And I actually didn't even have to kill one myself. Crazy.

Thanks James. Yea, my wife didn't do it on purpose, and when I told her it was dead, she got all sad. haha

The white tale here are mostly pretty small compared to the ones I used to hunt in Natchez, MI where I grew up hunting.

And we have so many squirrels that I have hit a couple and cooked them real good. The last one I hit, was paralyzed for a bit so I put it off in the grass, and he eventually got up and was fine.

Great haul! You gonna soak it in iced salt water?

Got it iced down and have it to where it drains all the water out. I just add more Ice everyday and drain for a week or two. I haven't tried the salt water trick. I used to soak in ice water and drain every day but prefer a more dry age now.

Man, that's my favorite!
We cut the back strap into small bite size pieces, put on a small spoon of cream cheese, one slice of jalapeño, then wrap the concoction in bacon and grill them.
Be sure to use tooth picks to hold the bacon to the steak, cheese & pepper so it doesn't fall apart.
Ive literally ate DOZENS of these in one sitting!
 
So to sum it up.............

The 16 performed great. This is at least the 9th or 10th deer that I have cleaned with this exact BK-16. She has held up great. I tend to push it a little more each time and up until now has handled perfectly.

Well, I must have hit a bone wrong while I was batoning thru the chest or ribs or something, cause I have a small bend in the blade now. Ugh.

I can probably fix it somehow, but I will probably start using one of my Saber 16's or a little larger knife like the BK-10 or 12 to baton thru animal parts from now on.


Have to say that the BK-16 is one of the best handling knifes ever. It is such a joy and fun knife to use for almost any task. I think that is why I gravitate to it so much. I have like over 100 knives and the BK-16 get's used more than all the others put together, almost. Only one that beats it is the BK-11 and that is for the simple fact that It is on my person at almost all times.


So in case any of you were wondering, Axis meat is far superior to Whitetail meat in many peoples opinion. It is more tender and better tasting. They eat different types of vegetation that other deer don't eat and I think that is part of why the meat is a little sweeter. It is also a lot darker looking. The Axis are also not as skinny as these hill county Whitetail deer we have running around here. And since they are not native to the US, we can actually hunt them year round here in Texas. With no bag limit as well. :D

We have seen a few monsters here and I think my neighbor has some pics from his game cam. I will try and get them from him and show you guys.

Thats basically what We do too, except we beat the deer medallions out with a meat mallet and wrap the goodness inside the deer then wrap the bacon around the deer and stick it with the toothpick.

So good. They never even make it inside so if you want some, you better be by the pit as soon as they are ready or you will miss out.

And mushroom is good in them too.

I was watching virtual voice (hello knife people) on you tube field dress a deer with the 16, he thought the 16 was great for the task, even preferred it over his usual bark river. But yeah a gift from the gods mate, plenty of meat there. Any damage to the vehicle?
