Another thing I learned

If you have a wicked edge all of a sudden you get to sharpen your friends knives

At some point I think I'll have to charge $ just to stem the, "here throw an edge on this one too"

Did a large carving knife last night

This is the easiest way to sharpen a knife there is, and get scary sharp edge

Now I just need to save up for 1200/1600 stones and get some strops and I'm polishing

You might do a bit of research... many are switching to using diamond film after the 1K stone to polish out the bevel... and appear to be getting better results than with the ceramics / leather strop progression.... or even the Chosera or Shapton stone progressions.

I'll defer to those who have made the switch... I've just noticed that some of the long time 'polishers' have moved to the diamond films, and have being reporting better results... hopefully they'll chime in.
 
I use the Ceramics, both the 1200/1600 and 1.4/0.6 micron just as finer sharpening stones to get a very crisp (but not polished) edge.
For a polished edge I use 1500-3000 grit sandpaper as well as Aluminum Oxide and diamond lapping films. They all give very good results but the diamond films cut faster and are very durable. I use them with a few drops of oil.

I use the sandpaper on aluminum platens and the diamond film on glass platens but either one will work just fine. I already had the ceramics before I started using the films so I still use them but it is very well possible to skip them.

I buy the Aluminum Oxide films here The reverse side is coated with pressure sensitive adhesive (PSA) so you can peel the backing paper off and stick them to the platens. One sheet will give you 20 strips and each will last several knives and at less than $4,- per sheet you can't go wrong.
