These knives are made in the Yucatan region of Mexico,by JD Ware ,formerly of PA.,who now resides down there. Jeff makes fantastic kitchen knives , (others,too,folders & hunters), they are proportioned like professional chef's cutlery,but with an impeccable fit & finish. Super fine quality,custom handmade cutlery here.
Both knives feature 440C stainless blades ,hollow ground,satin finishes.When I say wicked slicers ,I really mean it.
Stainless handle pins are left "proud" for superior holding power for a lifetime of service. The "Tszalam" wood is of the region,a dense hardwood that reminds me of ironwood or cocobolo,but with a great looking grain all its own. Scales are "bookmarked".
These knives have really perfect sized & comfortable feeling handles.
Small fillet boner/slicer is 8" OAL,with a 4-1/8" blade,3-7/8" cutting edge. 1/8" thick stock
The parer utility is 6-3/4" OAL with a 3-1/8" blade,2-3/4" cutting edge. 1/16" thin stock,you can poeel with this one.
These are great knives and both as a set would be better.Fantastic Christmas gift idea.
Real assets for a butchering,meat processing set,too.

Jeff makes these simple blade covers ,he says, for shipping. Out of cardboard & hand woven cloth of the region,they look good,and can serve as blade protectors if these knives are kept in a kitchen drawer. These will definitely add spice ,opening them up Christmas morning.
