JA Hinkle question

I have the twin four star 2 10 piece knife set from Hinkle and I was just wondering if anyone knows what type of steel is used on these knives I don't see it anywhere on the blade

Also the website says they are all sharpened to 15 degrees except the 5 in Santoku hollow edge which they sat is 10 degrees. Would those be good angles to keep them at or should some of them be raised/lowered

You most likely have:
Zwilling J.A. Henckels Four Star knives.
If you have been happy with the performance with these edges I would not change them. Not sure of the steel that they use.

X50CrMov15 is the steel and its ran to the mid 50's on the rockwell scale. It's a basic stainless steel ran soft to sharpen easy.

It would probably be best to just aim for 15 per side and finish with a 1k waterstone.
