(I cannot remember clearly the name of the Japanese maker, but it is custom forged. I had ordered a longer blade than what he sold).
Forged Japanese santoku - blade length (cutting edge) is 7inches. High carbon V2 blue steel core, hammer forged rustic finish on the soft iron laminate. It's been used and sharpened. Some patina here and there. Thin and crazy sharp edge. Handles are D-shaped burnt chestnut with a black plastic/buffalo horn collar (handles are waterproof). The steel takes a very keen edge and is easy to resharpen, just needs a little maintenance by cleaning off and oiling before storage. Comes in a box.
