New fixed blade knife for sale! I'm not sure what you would call this...thing, but it looks pretty cool! The overall profile design is not that of my own, it was something that caught my eye while fiddling around on Facebook one day. I didn't have a proper plan on what I wanted to do with this knife, but rather just let it take me where it wanted to go. Some of us makers like to geek out on steel and heat treatment, and one of my favorites to use was made by Crucible especially for the knife making market. It is called Cru Forge V, and is a basic 1% carbon steel but with a decent dose of vanadium which gives the edge excellent wear resistance. Anyone who has given CFV a hand rubbed finish knows that it simply scoffs at abrasive material like sandpaper! The heat treatment is often said to be the soul of the blade, and I like to take extreme care during that whole process. After soaking at a precise temperature, quenching in an oil bath, and triple tempering, the final Rockwell hardness is ~62-63HRC. The high sabre grind bevel has a hand rubbed finish at 400 grit which follows the edge curve, and 220 grit flats for a nice contrast look. The handle is made from mesquite wood, and features a Japanese "ito" wrapping over a pair of purple heart "cross" menuki. The wrap is epoxy impregnated for durability as well. You can choke up on your grip while utilizing the finger groove for fine cutting, or back off on your grip to allow for a good chopping swing. I did add a sharpening choil, but gave it a gentle curve into the edge in order to minimize the material being cut from catching on the corner, which is a problem occasionally with regular round choils. This knife will make for a nice "one off" addition to your collection!

Awesome looking knife. Is this suppose to be an outdoors type blade? The reason I ask is because it looks like it would be a good kitchen knife as well. Thanks.
 
Thanks for the compliment TLA! The knife is what you want it to be. It certainly can be used as a kitchen knife. It can be used as an outdoors knife. The thing is with my knife “philosophy” (if I may be so pretentious) is that the knives I make should cross over in use. The overall profile may not be directed at kitchen use, but the grind (and more to the point how thin it is) will certainly lend itself to excellent fine kitchen cutting. But the overall size and shape will do quite well in an outdoors backwoods sort of setting.

Hence my hesitation to classify this knife as “this or that”. I honestly don’t know what it is, or what it’s function should be. Which is sort of the fun! It “can” be a precision slicer or it “can” be a rough and tumble chopper.

The geometry of that blade should make the quintessential slicer. With that handle shape and a wrap too boot, there is no way it would come out of a soaked hand. Nice piece.

Make more Santokus with 26° inclusive edges :)
 
Thank you all for your replies! This one is sold to TLA! Other Memory, duly noted! I love Santoku knives, and I love making them! I may just have to consider that this week!
