Japanese kitchen knife brands

I had no idea there were so many brands out there. Thanks everybody for the info. I'll probably try one of the inexpensive knives and work my way up. Thanks Steve G.

thombrogan just did you oneheckuva favor. Excellent links there. Go shop. Be happy!

I have 2 Shuns. 10" Chef and the cleaver...I can't say enough about them. Also, I chipped the blade on a bone by accident and sent it in and had it fixed and sent back in less then a week from when they got it.

I can't believe that nobody has mentioned KAI/Kershaw Wasabi line for Target/Walmart prices that smack my Henkels and Wustoff's knives around. At an average price of under $25 each these give you a really good steel and they we’re my gateway (drug) into Japanese style knives. Edge geometry could be thinner but by the time you realize that its time to upgrade anyway.

I buy knives by Aritsugu. These are hand made in Kyoto, and are first class quality.
A friend in Tokyo gets them for me at the Takashimaya department store in Ginza. Huge difference in pricing if you buy them there. The last one I got, an 11 inch Yanagiba was less than $200 in Tokyo, but sells for about $800 here in the States.

In America, you can buy them here: http://www.japanese-knife.com/index.php?categoryID=521

This is one of the Aritsugu knives

Some of my other Japanese kitchen knives are Kiya brand. Here are a few of those. Most of the Kiya knives are less expensive, running from $150 up to around $400 USD
