This is my interpretation of a Japanese mid-sized petty/paring knife. The knife is great for tasks that don't require a full size santoku or gyuto.

The blade is made from A2 and is heat treated to 61HRC. Edge holding is great, and A2 responds very well to stropping for routine maintenance. A2 is not stainless, and will eventually develop a nice patina with use.

The blade features a full flat grind that I slightly convex. I have found that doing so aids in food release. The blade is satin finished.

The geometry is fantastic. The stock is .086" thick and the cutting edge measures .005" thick.

This is an outstanding slicer that would make a great addition to any kitchen!
