Hey everyone! I have a very cool Japanese inspired kitchen utility knife to offer! The steel is Crucible's CPM 4V, an alloy with an amazing combination of high toughness and high wear resistance. Heat treat in house, as always, including the "delta" heat treat protocol with "cryo" quench and triple tempers for a hardness of 64.5HRC. The grind is slightly convex, but mostly a full flat grind with a hand rubbed satin finish. The blade is distal tapered, and terminates in quite thin edge geometry. Handle is a gorgeous piece of claro walnut with a black paper micarta bolster. Balance point is dead on perfect. I sharpened the edge using resin bonded diamond stones up to 5 micron, stropped on 1 micron leather. It simply drops right through a tomato like the tomato wasn't even there! With Crucible's bankruptcy, I don't know the future of steels like CPM 3V and 4V, but hopefully other domestic (and foreign) companies will make these awesome alloys under new names. Also side note.....this is one of the sharpest edges I have ever made. I can always trim the tops off of fingerprint ridges, but this one just came out nutz sharp!
