Two Chefs knives of .140” 440C stainless, tempered to Rc58/59. Each blade has a hand-rubbed 600 grit finish and comes shaving sharp. The tangs are skeletonized for balance and to provide internal epoxy rivets to help secure the handles. The handles are also fastened with 1/8” nickel-silver pins that are installed after the handle is finished. The rivet holes are slightly countersunk, the rivets are peined over and polished. They are left a little raised from the handle.

The 8.5" Chef Knife has handles of Yucatecan Chechen wood - also referred to as Mexican Rosewood - and is finished with multiple coats of Danish Oil and then waxed. The 6" Chef Knife has handles of Yucatecan Guayacan - aka Lignum Vitae. This wood has so much natural wax and oil in it that no further finishing is needed! Each knife comes in a protective, fabric covered, heavy cardboard sleeve. The sleeve is not meant for long-term storage.

The 8.5" is (SOLD) and the 6" is (SOLD). The prices include Fedex Economical insured shipping to N. America ($15 extra to EU). I ship knives to the US and Europe on a regular basis via FedEx. I accept Paypal or credit card.

I am a full time knifemaker working in Merida, Yucatan Mexico. I use almost exclusively local handle materials that I gather and mill or process myself. The wood itself is 4 5/8" long. From the back of the blade to the end of the handle is 5"

I'll take the 6". I was a chef for 9 years, got the 8.5" and it's my daily. I'm a butcher for a living and this man makes a true knife.
 
Thanks. It's a great knife. The Guayacan (Lignum Vitae) is wonderful wood - it's full of natural waxes and oils… super hard and super heavy. I'm sure you'll like this one.
