Jig Bevels

Hey guys, posted this in general discussion, but advised to post here instead. I'm contemplating using a jig, but theres a question I just don't get.

I grind free hand, my knives are all custom and all different. Seen plenty of videos of people using jigs though, presumably for ease of repeatable bevels. Not got one, but tempted.

My question is, how does a jig allow for the bevel to be parallel to a blade edge that curves at the tip, or is not a straight blade.
Think off a drop point blade, like the image below (not mine, just a pic I found). Is this flat grind possible with a jig? Any video tutorials about or is it a case of building a jig and just experimenting? Pointers appreciated.
