Hi folks -
I was priviledged to be the first reviewer of the new JK Camp and Kitchen Knife and it's companion Paring Knife.
These new designs by Stomper's wife, aka "The Boss" are a new direction for JK Handmade Knives.
Following are my measured specifications from the two knives:
Camp and Kitchen Knife
Blade Material - 01 Steel
Handle Material - Black Micarta
Weight - 4.1 oz / 116.23 gr
Blade Thickness - 0.0618" / 1.57 mm
Blade Length - 5.07" / 128.80 mm
Handle Length - 4.53" / 115.28 mm
Handle Width at widest point - .831" / 21.22 mm
Handle Width at narrowest point - .562" / 13.8 mm
Paring Knife
Blade Material - 01 Steel
Handle Material - Black Micarta
Weight - 2.2 oz / 62.36 gr
Blade Width - 0.0610 / 1.55mm
Blade Length - 3.01" / 76.51 mm
Handle Length - 4.187" / 106.35 mm
Handle Width at widest point - .597" / 15.17 mm
Handle Width at narrowest point .369" / 9.38 mm
Initial impression:
Both knives arrived sharp enough to rough-shave, meaning that I could swipe hair from my arm, but I would not want to shave my face with them.
The knives have Stompers convex grind, and both are beautifully finished, with the handle contours wonderfully sanded The rivets are all flush and both knives are symmetric, with even grinds and all work is without flaw.
The knives feel great in the hand. The micarta has a very nice grip, even when wet.
To start my evaluation, I sliced up some green pepper for snacking:
The C&K was excellent at the task. Then I did some tomato slicing with it:
How thin do you like your 'mater slices? It's up to you with the C&K:
Dinner was ready in a hurry with the help of the JK Kitchen knives.
Next, to give the C&K some patina, how about a nice chopped Vidalia Onion and some potatoes?
