Hi folks -

I was priviledged to be the first reviewer of the new JK Camp and Kitchen Knife and it's companion Paring Knife.

These new designs by Stomper's wife, aka "The Boss" are a new direction for JK Handmade Knives.

Following are my measured specifications from the two knives:

Blade Length - 5.07" / 128.80 mm
Handle Length - 4.53" / 115.28 mm

Handle Width at narrowest point - .562" / 13.8 mm

Paring Knife
Blade Material - 01 Steel
Handle Material - Black Micarta
Weight - 2.2 oz / 62.36 gr
Blade Width - 0.0610 / 1.55mm
Blade Length - 3.01" / 76.51 mm

Handle Width at widest point - .597" / 15.17 mm

Initial impression:

Both knives arrived sharp enough to rough-shave, meaning that I could swipe hair from my arm, but I would not want to shave my face with them.

The knives have Stompers convex grind, and both are beautifully finished, with the handle contours wonderfully sanded The rivets are all flush and both knives are symmetric, with even grinds and all work is without flaw.

The knives feel great in the hand. The micarta has a very nice grip, even when wet.

To start my evaluation, I sliced up some green pepper for snacking:

The C&K was excellent at the task. Then I did some tomato slicing with it:

How thin do you like your 'mater slices? It's up to you with the C&K:

Dinner was ready in a hurry with the help of the JK Kitchen knives.

Next, to give the C&K some patina, how about a nice chopped Vidalia Onion and some potatoes?

JK Handmade Camp and Kitchen / Paring Knife Combo review, cont'd.

I made some of my own recipe Brandy Peppercorn Cream Filets to eat with the potatoes and onions. I used the C&K as my table knife, where it worked very well.

The next night, I had eye of round steaks, and I again used the C&K as my table knife, I liked using it at the table.

Next, I put the paring knife to use cleaning a beef tenderloin roll:

If you've never done this task, you need a good sharp blade to get the bits of connective tissue from the roll:

Then you need something similar to a filet knife to get the "silver-skin" from the filet:

The JK Paring Knife did the trick! It was a little small to cut the steaks, so I went back to the C&K for that task:

I then cut up some asparagus to grill along with a couple of the filets:

That made a nice little meal. I used the Paring knife as my table knife for this meal.

As my time with the two pass-around knives comes to an end, I have only good things to say about the new offerings from JK Handmade Knives. It's nice to have a custom made knife to work with in the kitchen. I enjoy the patina that the 01 steel starts to develop, and I was happy to contribute to the patina of these two fine knives:

I understand that these will be offered in a combo for a reduced price as compared to buying each one separately. I don't think Stomper has set the pricing on these yet, but I know I will want a set of them!

Great review.

I think one would have to be nuts not to want a set of those knives in the kitchen. They look very well executed !
