I have a JK Kephart i bought i while back that i dont use. Bought it brand new, forced a mustard patina on it, and then i used it once and put it away. The patina can be easily taken off with some wet/dry sandpaper. Blade has a few scratches from use, but those can be taken out with wet/dry sandpaper also.. There is a little rust accumulating on the blade, but its very controllable. Shaving sharp edge.
