This is a fantastic chef knife made by Joe, that unfortunately will see little use from me because I prefer using a shorter blade. The hidden tang construction and thin blade make this a nimble knife at 5.05 oz., with the balance point just in front of the handle. As you might imagine, the thin blade and fine edge make for a great slicer. This is not a knife that I would use for hacking on bones or frozen food.
The knife has been used lightly and has a patina on places of the blade. The blade has a 400 grit finish under a medium scotchbrite belt finish. The bubinga wood handle was finished in 220 grit for a nice, sure feel in the hand.
Specs from Joe:
Steel: 1095 differentially hardened
Blade: 8 ½ long, 2 wide, 092 thick at the spine, .019 measured ¼ behind the edge, .009 measured at the shoulder of the edge
OAL: 13 ½.
Weight: 5.05 oz
Handle: Curly bubinga with a black paper micarta guard and brass pin
