For sale is a set of five Joe Calton kitchen knives. All feature full tang 1095 steel blades, black paper micarta handles, and brass pins.

The set features a parer, two steak/utility knives, a chef, and a cleaver. The finish is a bit rough, with some unblended contours on the handles, forge marks on the blades, and scratches on the edge bevels from Joe's toothy initial edges he puts on his knives. The chef and cleaver are differentially tempered. The cleaver has an interesting texture to it due to the rolled steel Joe used to make it.
They have all been used and stropped, with the result being patina (heavier on some than others) and smoother edge bevels due to stropping with leather and green compound. The chef was used daily and heavily over the course of 4-6 months, and has developed a nice convex edge bevel from stropping.
Here are the size specs for the knives:
Parer: 1/16" thick steel, 6.5" OAL with 3" blade
Steak: 1/16" thick steel, 8.25" OAL with 4.25" blades
Chef: 3/32" thick steel, 13.5" OAL with 8.5" blade
Cleaver: 3/32" thick steel, 12" OAL with 7" blade
All are full flat ground with microbevels, except for the cleaver which has a scandi convex blade with microbevel.
As these are all used and were not made to a high degree of aesthetics, I am selling the set for SOLD US shipping and paypal included.
